Medicinal & Edible Landscape Plants for Utah
(excluding southern Utah’s warmer zones)
Master Class Handout – Resilient Guild-Based Gardening
Overview
Northern, Central, East and West, Utah (primarily USDA zones 4b–7a) has cold winters, hot/dry summers, alkaline soils, and requires good drainage with supplemental irrigation once established. Southern Utah has a milder climate which will allow for many of these, but not all of the ones discussed here. This master list includes 116 cold-hardy medicinal herbs, berries, fruit trees, shrubs, and perennials.
Each entry includes:
Benefits — One-sentence summary of primary uses.
Cautions — Key safety notes and contraindications.
Companions — Guild partners for nitrogen fixation, nutrient cycling (comfrey), pollination, pest control, and moisture retention/weed suppression.
Key Guild Principles
Layer plants by height: canopy → shrubs/berries → herbs/perennials → groundcovers.
Universal supporters/companions: Comfrey (dynamic accumulator/chop-and-drop mulch), Yarrow (beneficial insects/nutrient miner), Clover (nitrogen-fixer), Chives/Garlic Chives (pest repellent).
Plant in full sun (except shade-tolerant), well-drained compost-amended soil, and mulch heavily.

Start warm-season annuals (basil, cayenne) indoors; direct-sow cool-season ones (cilantro, dill, chervil, parsley) for best results.
Integrate annuals into guilds: cayenne + basil + onions/garlic chives + yarrow; dill near brassicas/berries for pest control.
Peach trees benefit from comfrey mulch and garlic/onion companions for pest protection.
Example guild: Peach or apple tree + comfrey + yarrow + clover + garlic/chives + kale + basil/cayenne edges.
Succession planting for cilantro, dill, and parsley extends harvest.
